Wine Making

Wine making process is basically from vine to wine. Wine making to most people start only after harvest of the vine. Wine making definitely need to consider the following main factors which would determine the quality and character of a wine...

  • the way the grapes (vine) are grown
  • the environment with the right climate and soil
  • the way the grapes are harvest
  • the expertise in wine making of the vintner

Wine making process

  • Grow and harvest grapes.
  • Remove stems and crush to release the juice which is called "must". 
  • If making a white wine, press the juice off the skins or leave the juice in contact with the skin for a few hours when making Rose wine. Well as for red wine, just leave it there.
  • Next, either induce fermentation using a yeast culture, or allow fermentation to start naturally with yeast on the grape skin.
  • Fermentation for white wines are usually around 45 and 55 degrees Fahrenheit and 55 to 75 degrees Fahrenheit for red wines.
  • Keep must in a cool, food-grade container (usually stainless steel nowadays)
  • While fermentation is active in a red wine, the seeds and skins will rise to the top of the fermenting vessel. Punching down the cap at regular intervals is also necessary.
  • Separate the juice from the skins (if this is a red wine), seeds, and fruit pulp. This may be done at various points, usually at the end of tank fermentation.
  • When tank fermentation is complete, rack (draw off) the wine. Racking takes time and will be repeated especially frequent (about five times) for the first year. 
  • This separate wine from the settled yeast cells and sediment which is called the lees. 
  • Add sulphur dioxide as a form of preservative to prevent both oxidation. This will not interfere with your pleasure.
  • Fining agents such as egg whites may be used to remove suspended solids.
  • Filtration maybe also used, which can have a negative impact on the quality of the wine. However, this can produce a slightly sweet wines.
  • Bottle the wine. 
  • Continue ageing in the bottle if necessary.

Wine making in modern factory

Wine from grown from different land, climate and conditions of making wines causes variable of the product. Wine factories try to hide this variation, producing consistent wines from year to year by blending, additives and so on, to create wine brands that are more consistent for the mass market consumer.

Wine making in traditional old world winery

Traditional winery may lack the modern wine making equipment, such as stainless steel vessel for fermentation, centrifuges and sterile bottles which are critical to modern wine making (viniculture). However, some of the world's finest wines are still produced in the traditional way despite the trend of winery modernization.
